Halibut with Avocado-pineapple Salsa

This recipe comes out of the Martha Stewart food magazine.  I made it for myself one evening when I was home by myself.  (and of course I can never EXACTLY follow a recipe!)

Salsa:

2 avocados diced
same amount of diced pineapple
half that amount (or less) of red onion, finely chopped - when I made this I used too much and it took over :(
cilantro leaves, torn finely (I'm not a big cilantro person, so I used very little)
juice of 2 limes

Toss together in medium sized bowl.


Fish:

Halibut fillets (there wasn't any fresh halibut at my grocery store on that particular night, so I bought some other white fish, can't remember what now!)
Salt & pepper
Olive oil

Lightly coat fish with olive oil, place in baking dish and sprinkle with salt & pepper.  Broil fish until opaque, about 8 minutes.

Top fish with salsa & serve.  I served mine with sweet potato fries with dipping sauce.



Jill's "delicious with everything" creamy dipping sauce.
Mix equal parts of sour cream & Miracle Whip together in small bowl.  Add taco seasoning to taste.

I love this simple dip.  I use it on sweet potato fries, it makes good chip dip, it adds bite to tacos, and it's so flexible!


Now I thought a nice light beer like Corona would have been nice with this, but I didn't have any on hand.  What I did have was rum & tonic!

Pour 1oz. of white rum in tall glass full of ice.
Squeeze in fresh lime wedge.
Top up with tonic water.

This is a super refreshing drink, great for those of you who don't do the sugary sweet thing!  And because I was basically making this dinner to blog about, I had to pretty it up with some pineapple!

  1. I have to disagree with you. It's not Jill's delicious with everything creamy dip! I think we gotta give the credit to Dad on that one! Lol can't wait to make this. We are gonna have so many adventures together when you're here!
