I'm in full practice mode for my sisters wedding which is in 6 months, 5 days...not that I"m counting. I made my first cake with my brand new cake pans.
It was convenient that it was my best friend's birthday! So I made her a cake!
This one is a full 2 cake mixes. I baked it in the medium size pan, one mix at a time (each layer). And because I don't have oodles of time, I did them earlier that week and froze them.
I used thick pudding to fill the cake, using just over a cup of milk instead of the 2 it called for. Slight problem - filling 2 layers of frozen cake with pudding will freeze the pudding!!
I made a mint cream cheese icing which I think is my new favorite icing. I used it back here for these St. Patrick's Day oreos and on these cupcakes.
Mint Cream Cheese Icing:
1/2 cup hard margarine
1 block cream cheese (8 oz.)
3-4 cups powdered sugar
1 tsp mint extract
few drops green food coloring
I iced the whole cake with it, and was pretty proud of how good it looked. (although I know my high school home ec. teacher would be frowning at me for not doing a crumb layer first!)
I topped it off with some grated dark chocolate. Stay tuned for how I later regretted that choice.

It says 1/2 hard margarine, half what? Cup? Can you use butter instead?
