A while back I was eating a gluten-free/paleo type of diet. I was really liking it, and the biggest thing I noticed was my appetite - I wouldn't get insanely hungry (when accompanied with anger, we get "hangry") and could go longer periods of time without needed to shove something in my face, it made life a lot easier! The only reason I haven't really kept it up is that it's really hard when the other member of your household ISN'T eating the same type of diet as you. :(
Anyway, one of the really good things I found were these cookies. They're nice and soft, and really no more trouble to make than regular cookies.
What you need:
2.5 cups ground almonds (I buy them ground from Bulk Barn, but you can grind them yourself too)
3 Tbsp coconut flour (again, Bulk Barn)
1 tsp baking soda
2 tsp ground ginger
2 tsp ground nutmeg
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp cocoa powder
1 cup xylitol or sugar (I've made it with both, and they both work, if you have pets make sure to keep xylitol away from them, it can be fatal!)
1 egg
3 Tbsp coconut oil or butter, melted
4 oz cream cheese, melted (half a brick)
1/2 cup milk (recipe calls for coconut milk)
2 tsp vanilla extract
1) Preheat oven to 375 degrees F
2) Combine almonds, flour, baking soda, ginger, nutmeg, cinnamon, cloves, cocoa powder and sweetener, and mix thoroughly.
3) Add in egg, butter, cream cheese, milk, and vanilla and again mix well. If you find your dough is too thick, add milk a tablespoon at a time (I've never had to do this!)
4) With a couple spoons, drop cookies onto cookie sheet. (Recipe says to "shape into balls and flatten" I say "good luck" the consistency is pretty sticky, and this just isn't going to work)
5) Bake for 12-15 minutes (DO NOT bake for 25 minutes like the recipe says, you will have hockey pucks!)
These cookies are tasty, and you can't even tell they're wheat free. They freeze well too!
